Chickpea Fritter Sandwiches with Fry Sauce

Notes: Makes 10-15 Chickpea Fritters

Fritter Ingredients:

  • 4 Cans of Chickpeas, Drained
  • 1/2 Cup of Sun Dried Tomato, Diced
  • 1 TSP of Dried Coriander
  • 8 Cloves Garlic, Diced
  • 1 Small Red Onion, Diced
  • Salt and Pepper
  • 3-5 TBL Olive Oil (Grapeseed Oil Works too)
  • 3-5 TBL of All Purpose Flour

Sandwich Ingredients:

  • A Few Pieces of Lettuce
  • A Few Slices of Red Onion
  • A Handful of Sprouts
  • A Few Slices of Tomato
  • A Few Slices of Vegan Bread
  • A Smear of Fry Sauce (Recipe Here)

Directions:

In the food processer, place Chickpeas, Onion, Garlic, Salt and Pepper, and Sundried Tomatoes and process till smooth. Pour in olive oil while the food processor does its thing to help form a smooth batter (similar to hummus). Pour batter in a mixing bowl and add flour. Form Fritters into a pattie (2 TBL is usually enough per pattie). Either fry in a frying pan with a few tablespoons of olive oil till golden brown, or use the air fryer at 390 for 10 minutes, flipping halfway through. Eat on its own or build a sandwich using the ingredients listed.
