Quick Veggie Chili

Ingredients:

  • 2 Cans of Pinto Beans
  • 2 Cans of Red Kidney Beans 
  • 2 Cans of Black Beans
  • 2 TBL of Oil
  • 1 small Onion
  • 1 Can of Corn
  • 3 Small Carrots diced
  • 4 Cloves of Garlic
  • 2 Stocks of Celery Chopped
  • 3 Bell peppers
  • 1 Large Cans of Tomato Sauce
  • 1 Large Can of Diced Tomato
  • 2-3 Cups of Vegetable Stock (or more as needed)
  • 3 TBL of Chili Powder
  • 1 Tsp of Cumin
  • 1 Tsp of Cayenne
  • 1 tsp of Paprika
  • 1 Tsp of Oregano

Directions:

  1. Saute the Veggies in Oil
  2. Add Seasoning
  3. Add Sauce, Diced Tomato, and Stock
  4. Simmer for 15 Min
  5. Serve with Vegan Cornbread
