Mexican Taco Bowls- Insta Pot

Ingredients:

4 Cups of Veggie Broth

2 Cups of Rice

1 Can of Black or Pinto Beans

2 Cups of Green or Brown Lentils

½ Cup of Salsa

1 TBL of Chili Powder

2 tsp of Onion Powder

2 Tsp of Garlic Powder

½ Tsp of Paprika

¼ tsp of Cayenne

¼ Tsp of Cumin 

Salt and Pepper

Directions:

  1. Put everything in the insta pot and pressure cook on High for 16 minutes.
  2. Fluff the rice and put into bowls

Additions:

  • Add Some lettuce with a squeeze of lime to top.
  • Add some Avocado 
  • Add some Cilantro
  • Add some Chopped TOmato
  • Add some Vegan Queso
  • Eat with Tortillas or Chips
