This is one of my most used recipes for my family. My husband and daughter love it, and it is comfort food. My daughter boasts that it tastes “way better” than its meat version. This recipe can be modified for the insta-pot: if you would like to use the insta-pot, add an extra cup of water or vegetable stock and cook for 15 min on high pressure. If you use the insta-pot you do not have to soak the lentils first; just throw everything in the pot and cook. I also like to dehydrate and freeze this so I always have a quick meal on hand.
Ingredients:
- 3 Cups of Soaked Lentils
- 2 Cans of Tomato Sauce
- 1 Cup of Ketchup
- 2 TBL of Prepared Mustard
- ½ Yellow Onion
- 2 TBL of Garlic
- 1 Green Bell Pepper
- 1 tsp of Celery Seed
- 1 tsp of Chili Powder
- 1 tsp of Onion Powder
- 1 tsp of Brown Sugar
- 1 TBL of Coconut Aminos or Soy Sauce
- Splash of Cider Vinegar
- 1 tsp of Paprika
Directions:
- Sauté Veggies
- Add Spices and Lentils
- Add Sauce
- Simmer
- Serve on Cornbread or White Garlic Bread
